In Elgin (where the syrah come from), we exclusively work with Elgin Orchard farm. Elgin is probably one of the coolest regions in South Africa so the ripening period is very long (like in northern Rhône Valley).
The vines have enough time to make the grape perfectly ripe. The soil, composed of clay, also help the vine to keep the water underground and preserve them against the water stress.

The Chardonnay comes from a single vineyard from the top of Villiersdorp Mountains. At more that 600 meters above the sea level, the block has even a colder climate than Elgin!
We pick the grapes on March (instead of January for major part of SA chard) and there are always perfect!
